Chicken Pockets, YUMMY!


So once again it was almost lunch time and I had no idea what to fix for Kassi and me. We were out of hot dogs, out of peanut butter, no lunch meat, no ideas! I needed something fast that I could throw together with ingredients out of my bare cupboards! I found a can of chicken, a roll of crescent rolls, shredded cheese, sour cream and Italian seasoning. I preheated the oven based on temp on crescent roll can. Then I mixed the chicken, the cheese. sour cream and Italian seasoning together. Then I unrolled the crescent rolls laid each one flat on the cookie sheet, placed a spoonful of the chicken mixture on each piece of dough and wrapped the dough around the chicken. When they were all wrapped up I baked them for about 10 minutes or until they were golden brown. They were really good and I figured them up to be about 150 calories a piece. The made the perfect throw together lunch and reheated well the next day too!

Ingredients
1 pkg crescent rolls
1 can chicken
1/4 cup shredded cheese
1 Tbsp Italian seasoning
1 Tbsp sour cream

Oatmeal Banana Muffins




Okay so this isn't very creative but it is really yummy!! I wanted a muffin I could serve for breakfast that wasn't full of sugar and was some what healthy and this is what I found! The recipe was on allrecipes.com and then I modified it a bit. They must be good because I made some mini ones and gave one to each girl and then go into the shower. When I got out each had grabbed a big one to eat and they ate every crumb!!

Ingredients:
1 1/2 Cups White Whole Wheat Flour
1 C old fashioned oats
1/4 C sugar
2 Tbsp Honey
2 tsp baking powder
1 tsp baking soda
1 egg
3/4 Cup skim milk
1/3 Cup apple sauce
1/2 tsp vanilla
1 Cup mashed banana

Pre Heat oven to 400 degrees. Mash bananas with honey and set aside. Mix dry ingredients and set aside. Break egg into a bowl and break the yoke then add the milk, apple sauce and vanilla. Slowly add the dry ingredients to the we and mix thoroughly then fold in the banana mixture. Put batter into prepared muffin pan and bake for 20-22 minutes or until golden brown. This made 1 dozen muffins (using the pampered chef stone wear muffin pan) with a little batter left over, enough to make 6-8 mini muffins!

Free Printables



Today I had the idea to do some home organizing printables. I saw some I like on pintrest, but they weren't decorative enough for me. So using my scrap booking software I made these "pages" that I can print out. My idea is that I will print them, laminate them and the put them in frames to hang in my kitchen. Then I can use dry erase markers and write out my weekly menu, weekly shopping list and then jot down any tasks "to-do's" I have for the week. So here are two differently themed home organizational print outs that I came up with this afternoon. If you like them feel free to print them out, if you like the idea but these don't match your decor let me know I would be happy to make something up for you!
